1 cup cooked Canadian Pure Wild Rice
** Using some turkey or chicken stock in basic method will enhance this dish.
1 pound lean ground turkey
1-1/2 cups milk
1/2 cup thick teriyaki stir-fry sauce
2 medium carrots shredded
1 tbsp fresh ginger root peeled and chopped fine
1 clove garlic chopped fine
2 green onions chopped
2 tbsp lemon juice
6-10 ice berg lettuce whole leaves.
Cook Wild Rice according to basic method. (keeping cooked Wild Rice in the freezer will eliminate this step)
Cook turkey in non-stick fry pan until no longer pink breaking up to small pieces. Stir in milk and teriyaki sauce; bring to a simmer, stir.
Stir in carrots, ginger and garlic.
Reduce heat and simmer, stir often for 10 mins. Sauce will thicken. Stir in green onions and lemon juice.
Place lettuce leaves on serving plates, spoon warm Wild Rice into center, top with turkey mixture, wrap, serve and ENJOY.
